Balsamic, Salmon & Glaze with Garden Greens

Each bite of this Balsamic Salmon Salad is a fusion of smoky salmon, tangy balsamic, and garden-fresh veggies. The creamy feta cheese adds a layer of richness, while the Everything but the Bagel seasoning provides a crunchy, flavorful twist. Perfect for meal prep, this salad turns the everyday into the extraordinary!


Grocery List Ingredients (4 prep containers):
2 bags (5 oz each) of spring mix salad blend
10 oz package grape tomatoes
200 g English cucumber (1 small)
8 hard-boiled eggs
4 oz crumbled fat-free feta cheese
4 Bumble Bee Smoke Flavored Coho Salmon Fillets in Oil (3.75 oz each)
200 g Ken's Steak House Lite Balsamic Vinaigrette Salad Dressing
224 g Giuliano Sweet Red Onion Strips Marinated with Lime
56 g Star Family Reserve Modena Creamy Balsamic Glaze

Step-by-Step Instructions:
Prep the Veggies: Begin by washing the grape tomatoes and cutting them in half. Slice the cucumber into thin half-moons and set aside.
Assemble the Salads: Evenly divide the 2 bags of spring mix salad blend among all four meal prep containers. Place the cucumbers on the scale, zero the scale, then add 50g of cucumbers. Repeat for all containers. Add approximately 70 g of tomatoes into each container. Zero the scale with the jar of Giuliano Sweet Red Onion Strips and add 56g to each container. Zero the scale with the feta container and add 28 g to each salad. Place two sliced hard-boiled eggs in each container.
Storage: Seal the containers and store them in the fridge for up to 4 days. Set the salmon aside, you will use one container for each salad when you are ready to eat.
Ready to Eat: Keep your salmon sealed until you're set to eat. Open it and place the contents atop your prepped salad. Zero your food scale with the entire salad, then pour 50g of Ken’s Lite Balsamic Vinaigrette. Drizzle 14g of the Modena Creamy Balsamic Glaze. Top with a dash of Everything but the Bagel seasoning for that finishing touch. Add salt to taste.
